How did you get the name?
I've always had a lot of nicknames growing up. Lil Ms. Sueshine is a combo of two of my nicknames. In high school, one of my many nicknames was Lil Suzy Fire Sign (I'm an Aries). Sueshine came from my Auntie Sherri who calls me Sue and it evolved into Sueshine. Mashed it together and got Lil Ms. Sueshine.

Why is the main focus of your blog about baking?
I have an appreciation for food in general because I come from a family of amazing cooks. My mom's generation in particular either have natural talent when it comes to cooking or have a great palette for food. You would think the cooking gene would have passed down to me but unfortunately it kinda skipped me. I can cook if I try but there is no natural talent there. I did discover pretty early on that I am good at following recipes and I like to be exact....to the point of perfection or it'll drive me a little nuts. Since baking is pretty exact, I found out early on that I was good at it. Since I was diagnosed with type 2 diabetes, I learned to appreciate baking sweets specifically because you know what they say, you always want what you can't have. In order for me to have what I wanted, I had to learn to tweak my favorite sweet recipes because there are not very many options locally for sugar-free baked goods. I know there are other people out there that are going through the same dilemma as me so I started this blog to share my journey.

Are all the recipes and places you talk about diabetic friendly? 
Not always. The recipes I include have either come from sources that offer sugar-free/reduced sugar options or can be adjusted to make into something diabetic friendly. As for the places I talk about, they too are not always the most diabetes-friendly but I'll try to focus on places that might have healthly options. I can't always be perfect....like a lot of people, I struggle to eat the right thing so I might talk about the occassional "guilty pleasure." Please note that I'm not a dietian or expert in diabetic diet. You should always follow your personal nutrition plan your doctor has advised and only you can decide what you can or cannot put in your mouth.

If you are having such a hard time finding local sugar-free options, why don't you open your own bakery? 
I've always gotten encouragement to start my own bakery but it's something I'm just not really interested in doing at this point. Baking is something that I enjoy and something I do for fun. Personally, if I opened my own bakery, it would turn into a job. Plus, I can't always turn on the creative part of my brain. Sometimes I'm just not in the mood and I can't do it on command. I do make the exception and will cater for friends and their special occassions....if they ask nicely.

What's your favorite thing to bake?
Chocolate chip cookies. My mom's cookies are like no one elses but I've managed to make mine very close to hers :)

What other random things should we know about you?
My little immediate family (who I will refer to often in my blogs) is made up of my husband, Scott, who I have been married to for over 4 years and my 7 year old fur baby, Eponine, the beagle. I have a really big  extended family. I'm just your every day, 20-something SoCal girl but no, I do not surf (There are sharks in the ocean!). I'm not frou frou in any sort of way. I have an appreciation for fashion (especially shoes and purses) but my staple wardrobe is made up of jeans, tank top, mascara, and lip balm. I have a regular 9-5 job in accounting. I read a lot...so much so I've run out of room for real books that I had to ask for a Kindle for Christmas. Couch naps are a requirement every once in awhile. I wish they would find a cure for diabetes.
